Meet our Team


Wojciech Korfel and Ewa Woronowska are the two most important people in Prologue who tend to the needs of all our guests as well as take care of both kitchen and front-of-house team in a very professional manner. It is no coincidence that they make real power tandem as they share the same values, impressive International experience and love for what they do. Most of all though, what keeps them in sync is focus and constant need to improve their performance. It is not the first time their paths cross as they already have worked together before over three years at brilliant The Fat Duck, Bray where they could experience on their own skin how much it takes to deliver truly great dining experience and the real cost of striving for perfection. Thanks to Ewa and Wojciech you can also feel that touch of excellence in comforting surroundings of our restaurant.


Wojciech Korfel is a charismatic leader and very experienced chef who started his career at School of Gastronomy in Bukowno and did not stop learning ever since. Over a decade of experience he collected at the most recognisable, iconic establishments of United Kingdom and it really shows in his creative and inspired work. Wojtek gained his knowledge at various gastro-pubs awarded with AA Rosette** and built his great set of skills at such exceptional places like Dinner by Heston, Hand and Flowers, Gordon Ramsay at Claridges and La Manoir Aux Quat'Saisons learning always from the very best. Up until impressive 3,5 years spent at The Fat Duck in Bray UK awarded with prestigious three stars Michelin***

Wojciech also took part in well documented project of moving Heston Blumenthal’s restaurant to Crown Towers Resort in Melbourne and after mind blowing nine months in Australia he has decided to return to his native Poland where he was appointed Senior Sous Chef at the first restaurant in Poland awarded Michelin star*- Atelier Amaro. In October 2017 Wojciech joined Prologue as an Executive Head Chef and began the whole new chapter in his career as well as in a history of our restaurant. He took on board his experience and talent but most of all great appreciation for what it takes to deliver excellence.

In this time, I worked alongside incredibly talented front-of-house staff, chefs and sommeliers who helped me hone my skills as a waitress as well as develop a deep appreciation of food and wine. After many years abroad I returned to my native Poland to show all our guests here as well as young people making their first steps as waiters that service is much more than just tending tables. Done well it can be a source of real joy and professional satisfaction. My experience has taught me the importance of bringing passion, openness and professionalism to each dining experience. Przemysław Prusik is a young and vibrant personality gifted with natural elegance, high work ethics and incredible patience which makes him just a perfect fit for our management team. He expects a lot from his young and dynamic team but even more of himself. Understanding very well the importance of the quality in the experience we strive to create for our guests, he pushes himself and a team to the new levels. Management is far more than fantastic service alone, it consists of many and often mundane tasks necessary to assure the perfect outcome. Nevertheless, Przemek takes great pride in his work and in his very own words - "...working with such a high level of expectations can be challenging at times and it always is very demanding but genuine happiness and gratitude of our guests make it all worth a while. I know there is a lot more to be done for us as a team, but I also realise that we have a very important mission to accomplish on the restaurant scene in Poland. On top of that working with people gives me great satisfaction and profession devoid of challenges would not be worth pursuing ..."

Sous Chefs

Sebastian Ossowski earliest experiences as a cook Sebastian gained at one of the restaurants here in Gdansk - Metamorfoza, where he started to broaden his first skills and think seriously about the profession. In search for new challenges and real experience in a busy high profile restaurant he found Prologue where under the close eye of head chef every day he proves scale of his potential and shows how much he cares for his work. He is one of the youngest and most promising chefs in our team and thanks to his determination and hard work already achieved much more than anyone thought possible.

Łukasz Mierzejewski is an ambitious young cook who joined us over a year ago inspired by the knowledge and experience of our Head Chef Wojciech. His goal is to learn and become the best he can possibly be, fascinated by the process of creation, discovering new flavours but also integrity in our professional kitchen. In life as well as work Łukasz doesn't like to take short cuts that's why he fitted in very quickly and in Prologue he is finally learning the true price of striving for perfection. Thanks to his determination and hard work he also successfully managed to combine work with studies and recently completed Master's degree in Food Science and Nutrition👌 However he never takes anything for granted, he realises his shortcomings and with great integrity and respect for his profession takes one day at the time using it as a great chance to learn and constantly improve his skills.
